You will need:
- 2 sweet potatoes, cut into pieces
- 4 tbsp olive oil
- salt and black pepper
- 2 slices of bacon
- 1 red pepper, chopped
- 1 small red onion, sliced
- 1 tbsp giner, minced
- 1 tps ground cumin
- Juice of an orange
- 500g fresh spinach
- Preheat oven to 200 degrees c.
- Put potatos on a baking sheet, drizzle with two tbsp of the oil, sprinkle with salt and pepper; toss to coat.
- Roast, turing occasionally, until crisp.
- Drain on paper towels and pour off fat.
- Put the pan back on medium head; add remaining oil to the pan.
- When hot add red pepper, onion and ginger.
- Cook until just softened; stir in cumin an bacon (sliced into pieces)
- Stir in orange juice and turn off heat.
- Put spinache in a large bowl
- Add potatoes and warm dressing.
